Vegetarian Chili

Vegetarian Chili served with mountain bread squares, pico de gallo (tomato salsa made with onion, coriander & lime juice), guacamole, low fat shredded tasty cheese & a tiny dollop of low fat sour cream. So good!

Sauté onion and spring onion, add 2 tbsp cumin and smoked paprika and cook off spices for a couple of mins add a diced capsicum and 2 sticks grated celery, 2 grated carrots, 2 grated zucchini, cut kernels off two cobs of corn or add a tin of corn kernels, 1 tin of kidney beans and two tins of tomatoes. Season well and add some stock powder to taste, simmer for half an hour until rich and flavorful 🙂
